White Chocolate Biscoff Cookie Bars
Since I bought a couple of jars of Biscoff when I was in the US, I thought I better make something with it instead of eating it straight out of the jar!  I knew I wanted to incorporate white chocolate because I thought it would go perfect with Biscoff.  So, I made these White Chocolate Biscoff Cookie Bars, which I ate straight out of the pan……instead of the jar!

When I first took them out of the oven they were still a little gooey in the middle.  I ended up putting them back in for another 10 minutes and they were perfect.  I couldn’t resist eating all the crunchy edges while they were still warm.  I really had to force myself to walk away from the pan, otherwise I could have ate the whole thing.  Seriously!

I’m not sure my kids liked them as much as I did because I noticed that there’s still two pieces left.  Perfect – more for me!  Once those two pieces are gone, I guess I’m going to have to go back to eating Biscoff straight out of the jar!  Oh, darn!  There could be worse things!

White Chocolate Biscoff Cookie Bars

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutes

Yield: 12 bars

Chewy cookies bars filled with creamy Biscoff and White Chocolate Chips.

Ingredients

  • 1/2 cup unsalted butter, melted and then cooled slightly
  • 1 egg
  • 3/4 cup brown sugar, packed
  • 1/4 cup sugar
  • 1 Tbsp. vanilla
  • Heaping 1/2 cup of Biscoff
  • 1/2 tsp. cinnamon
  • 1 1/4 cups flour
  • 1/2 tsp. baking soda
  • pinch of salt (optional)
  • 1 pkg. (save 1/4 cup for the top) White Chocolate Chips

Instructions

Preheat oven to 350 F.
Line an 8X8 pan with foil, spray with cooking spray and set aside.
In a medium size bowl, mix together flour, baking soda and optional salt.Set aside.
In a stand mixer with the paddle attachment, blend cooled butter with egg, then add sugars and vanilla and mix until smooth and creamy.
Add in the Biscoff and cinnamon and blend well.
Slowly add the dry ingredients and stir until just incorporated.
Stir in White Chocolate Chips.
Pour batter into prepared pan and smooth with a spatula or the back of a spoon.
Once batter is smooth, pour the reserved 1/4 cup of White Chocolate Chips on top.
Bake for 30-35 minutes or until toothpick inserted into center comes out clean (or almost clean, since you may hit chocolate).

Biscoff and white chocolate are my most favorite combinations!!Oh goodness, these bars are all I need!I always have at least two jars of Biscoff in my pantry, time to break one out!

I’ve been seeing Biscoff everywhere and I haven’t bought any for the same reason you mentioned…I’d eat it all out of the jar!These would be the perfect diversion, however.They look so good.I’m going to have to try them!

Okay, I think I’m getting kicked out of the food bloggers’ club for this, but I kind of don’t see the huge deal with Biscoff. (Sorry, I’ll show myself out…) That being said, these look so good–crackly on top, soft in the middle–that I just may try them with peanut butter instead.:)

I made these and brought them to work – HUGE HIT.I do have a question though.Is the 1/4 cup of white chocolate chips supposed to be melted and then poured on?Before baking?I just sprinkled them on top and mine did NOT look like your picture.The were delicious but I’m just wondering for next time and there will be a next time!

Hi Annette!Thanks for letting me know how they turned out!When I first took them out of the oven I sprinkled the white chocolate chips on top and then I second-guessed myself about whether they were cooked it the middle or not.So, back in the oven they went for another 10 minutes until I felt confident they were cooked (the cooking time in the recipe is the right time!) and that’s how the white chocolate chips got a little brown on top!So glad they were a huge hit!:)
