Zucchini Oatmeal Chocolate Chip Bars

I’m back from a wonderful 4 days at the cottage where the weather was beautiful and the sun was shining!

At home the weather is rainy and it feels like Fall.  Time to start planning homemade, nutritious snack ideas for the kids lunches.  I got two huge zucchini from my father-in-law when we were at the cottage and I made these Zucchini Oatmeal Chocolate Chip Bars with one of them.  Good thing the kids like them because they’re going in the freezer for their snacks.

I was actually surprised the kids liked them because normally they’re turning their noses up to zucchini.  I didn’t tell them at first there was zucchini in them but they figured it out by all the strands of green inside.  I grated my zucchini rather big but you could grate it a lot finer and I’m sure no one would ever know it was in there.

I added chocolate chips into mine because that always gets my kids interested in what I’m baking.  You can add whatever you feel like, such as coconut, raisins or nuts.  When I’m baking for my family I always go with chocolate chips because I know they’ll get eaten in no time!

Zucchini Oatmeal Chocolate Chip Bars

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 16-20 bars

Moist and chewy oatmeal bars filled with the goodness of fresh zucchini and a touch of sweetness from the honey and chocolate chips!


  • 4 cup rolled oats
  • 2 cups grated zucchini
  • 2 eggs
  • 1/4 cup coconut oil
  • 1/4 cup milk
  • 1/2 cup honey
  • 1/2 cup mashed banana (about 1 medium banana)
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (or coconut, raisins or nuts)


Preheat oven to 350 F. Line a 9X13 baking dish with parchment paper, leaving enough excess on each side to pull out later, and set aside.
In a large bowl, combine all ingredients except the chocolate chips and mix well.
Once all ingredients are combined, gently stir in the chocolate chips.
Transfer mixture to prepared baking dish and flatten with the back of a spoon until it's all even.
Bake for 20-25 minutes or until top is golden brown.
Remove and place on a wire rack to cool completely.
Once bars are cool, remove bars by pulling gently on each side of the parchment paper.
Bars will be soft and chewy. You can store them wrapped in the refrigerator or freeze for later.
