One more day!
Tomorrow is my last day of work until September and I can’t wait! I made these S’more Bars to bring to a potluck at work where we celebrated the end of the school year together. This time every year I always get the song “It’s the most wonderful time of the year” stuck in my head. I like my job but I can’t wait for summer holidays to begin!
To celebrate the end of the school year with the kids, we’re heading up to the cottage where the boys are heading out on a canoe trip. It’s been an annual trip that my husband and two boys take while my daughter and I get to hang out at the cottage. I like camping but I much prefer sleeping in a soft bed and having a toilet nearby! My boys anxiously await this trip because they can eat whatever they want and fish to their heart’s content!
Since I’ve been thinking about getting the boys ready to go camping this week, I was craving S’mores. I’ve never made them into bars before but it was a good substitute. This time I made them with a brownie center but next time I’m going to try them with a chocolate bar center, to be a little more authentic. Either way, how can you go wrong with a graham cracker crust, a chocolate center and toasted marshmallows on top?!
This summer we’re hanging out at home trying to get some of the outside stuff done and we might do a road trip to NYC at the end of August! What are your plans this summer?
