One more sleep until Christmas!!!

I wanted to share these Smoked Gouda Cheese Logs with you as a quick appetizer you can whip up today or sometime over the holidays.  They’re packed with flavor and this recipe makes two logs (or one cheeseball, if you prefer) so you’ll have lots to share with friends and family.

I’ll be sharing these cheese logs tonight with family at our house.  It’s been a tradition in my family for everyone to come to my house Christmas Eve.  We serve up meat pies, appetizers, and lots of Christmas baking!  It’s my favorite night of the whole year. The kids are anxious for Santa to come, my family is all together and the holiday excitement is in the air!

Although you might already have most of your holiday baking/cooking done; if you’re still looking for some delicious recipes make sure you check out the Life Made Delicious website.  This is where I got this recipe from and where I often go to for holiday inspiration and great tasting recipes.  For Christmas morning I made this Cinnamon French Toast Bake because I knew I could make it ahead of time and pop it in the oven while the kids are opening their presents.  I also found this recipe for leftover turkey that I’ll be trying on Boxing Day.   It’s this Harvest Turkey Pot Pie because leftover turkey recipes are the best!

Smoked Gouda Cheese Logs | A Sweet Baker

Smoked Gouda Cheese Logs

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 2 cheese logs 10" long or 1 cheeseball

Smoked Gouda Cheese Logs

Delicious cheese logs flavored with smoked gouda, sundried tomatoes, chives, and garlic. The perfect appetizer or snack to serve to guests with assorted crackers.

Ingredients

  • 1 pkg. cream cheese, room temperature
  • 2 cups Smoked Gouda, shredded (I used a 200g package and it made two cups exactly)
  • 1/4 cup fresh chives, chopped
  • 1/4 cup sundried tomatoes in oil, chopped (pat sundried tomatoes with paper towel to remove excess oil)
  • 1/2 tsp. fresh garlic, crushed
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup walnuts, chopped
  • Assorted crackers

Instructions

In a stand mixer with the paddle attachment, add cream cheese and smoked gouda and blend until smooth and creamy.
Add chives, sundried tomatoes and garlic and blend well.
Remove bowl from mixer and divide cheese mixture in two, placing each ball on a piece of parchment paper. Roll each ball into a log about 10" long.
Sprinkle once piece of parchment paper with the chopped parsley and the other piece with the chopped walnuts.
Roll one log in the parsley and one log in the walnuts.
Wrap tightly with plastic wrap and refrigerate for at least 2 hours to allow logs to harden.
Serve with assorted crackers.
Enjoy!
