I’m so excited! I have a big giveaway for you today from Yoplait’s Yopa Greek Yogurt!
First thing I want to tell you about, though, is this awesome Pumpkin Pie Greek Yogurt Dip I made. I had some leftover pumpkin puree sitting in the fridge that needed to be used up. I also had some Va-Va-Vanilla Greek Yogurt sitting beside it. Perfect opportunity to combine the two, add a bit of sugar and spices, and voila, you have an amazing Pumpkin Pie Greek Yogurt Dip!
For about 2 1/2 years now I’ve been eating low-carb and I’ve omitted most dairy from my diet as I was finding I was always feeling bloated. Since I started eating this way I’ve never felt better. I’m never hungry and I still get to have my sweet treats once a week. Even though dairy bothers my stomach I can’t give up yogurt. It’s one thing I look forward to, especially now that’s there’s Greek yogurt to chose from. So thick and creamy, with amazing flavors to choose from, that I can’t resist indulging in it.
I recently tried the Lotta! Pina Colada flavor (can you say tropical vacation?!) and the Mmmm! Mango Tango and both were full of flavor and oh, so creamy. For this recipe, however, I used the Va-va! Vanilla Bean (my fav!) which was the perfect pairing with the pumpkin and spices. Using Greek yogurt kept the dip nice and thick, perfect for dipping cookies and fruit into without the dip sliding off.
