Nalesnikis with Cottage Cheese & Wildberry Jam + 2 Giveaways #GayLeaFoods

I’m sure a lot of you are wondering what a nalesniki  is, right?

Basically, it’s a crepe.  The name nalesniki is the Polish word for pancake or crepe.  My husband’s grandmother used to make them for him all the time when he was little.  This past weekend he recreated them in our kitchen with these Nalesnikis with Cottage Cheese & Wildberry Jam.  They were amazing and I’m sure it won’t be the last time he makes them!

I think the only time I’ve ever had crepes before was from a mall kiosk and I ordered it filled with Nutella.  I remember them tasting so good but I never thought I would be able to make them on my own, so I never tried.

When I was thinking of what I was going to make this month that involved cottage cheese , my husband quickly volunteered to make his grandma’s famous nalesnikis filled with cottage cheese.

These nalesnikis would be perfect with just about any kind of topping you choose.  I tried mine with some cookie spread, some butter and some maple syrup (not all together!) but I preferred the Wildberry Jam the best.  I’m not usually a big jam fan but with the cottage cheese filling it was perfect!

Another one of my favorite ways to eat cottage cheese is with fresh fruit and a little touch of honey.  A protein-packed snack that satisfies me until mealtime.  Since I like it with fresh fruit I think I may even try it in an Apple & Kale Smoothie next time.  I bet it would make it nice and thick.  Why didn’t I think of that before?

Nalesnikis with Cottage Cheese & Wildberry Jam #GayLeaFoods

Prep Time: 45 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 30 minutes

Yield: 8 filled nalesnikis and 4 plain ones.

Polish crepes, called Nalesnikis, are filled with protein-packed Gay Lea Cottage Cheese and topped with Wildberry Jam or your favorite topping.

Ingredients

    For the Nalesniki batter:
  • 3 cups milk
  • 2 cups flour
  • 4 eggs
  • 4 Tbsp. sugar
  • 2 Tbsp. melted butter
  • Vegetable oil for the frying pan
  • For the Cottage Cheese mixture:
  • 1-750g container of Gay Lea Nordica 2% Cottage Cheese
  • 1 egg yolk
  • 1 tsp. vanilla
  • 1 Tbsp. sugar
  • For the garnish:
  • Icing sugar
  • Wildberry Jam
  • Other jams, spreads or fresh fruit of your choice

Instructions

For the Nalesniki batter:
In a large bowl, whisk together milk flour, eggs, sugar and melted butter.
Let the batter sit at room temperature anywhere from a half hour to an hour (trust me, this works!).
Once the batter has set, heat up your frying pan and about 1 Tbsp. of oil.
Slowly pour in your batter (enough to cover 2/3 of your pan) and then swirl your pan so the batter covers the bottom.
Cook until golden brown and then flip over to cook the other side until golden brown.
Place on a plate and continue cooking until all the batter is finished and nalesniki's are cooked.
For the Cottage Cheese Mixture:
Using a fine mesh sieve, place the cottage cheese in the sieve and allow to drain for about 30 minutes.
After the 30 minutes, use a spatula and push the cottage cheese against the sieve to release any leftover liquid.
Place cottage cheese in a medium size bowl and blend with a hand mixer to cream the cottage cheese.
Stir in the egg yolk, vanilla and sugar.
To Assemble the Nalesnikis:
Grease a 9"X13" inch glass dish with butter and set aside.
Preheat oven to 350 F.
Place one nalesniki on a flat surface and spread about 2-3 Tbsp. of the cottage cheese mixture across the middle of the it. Fold the sides of the nalesniki in and then roll the it into a log. Place nalesniki in the prepared pan.
Repeat for remaining nalesniki. I was able to fit 8 filled nalesnikis into my dish (6 across and then 2 underneath them).
*Note you will have a few extra nalesnikis left over after you use all your cheese mixture.
Bake in the preheated oven for 20-25 minutes.
Remove and sprinkle with icing sugar.
Spoon Wildberry Jam over the top or use a topping of your choice.
