Millionaire’s Shortbread Bars

These bars have three delicious layers – a shortbread crust, a thick, creamy layer of caramel and a delicious layer of milk chocolate. No wonder these bars are called Millionaire’s Shortbread Bars. They’re rich and delicious that a little piece goes a long way!

These Millionaire’s Shortbread Bars are slightly different from the original, where you have a smooth layer of chocolate on top.  I decided to just sprinkle the chocolate chips on top to give them some texture.   I enjoyed them that way but I think my husband would prefer the smooth layer of chocolate on top.  He’s not a texture kind of guy.  He doesn’t even like stuff in his ice cream!  Plain vanilla – that’s his favorite.  Crazy, I say….crazy!

Shortbread is the base of these bars and it’s by far one of my favorite cookies.  They always remind me of my grandma and Christmastime.  They’re made with real butter and really, how can you go wrong with that!

Millionaire's Shortbread Bars | A Sweet Baker

Some pretty exciting stuff is happening around here and I can’t wait to share it all with you, real soon! Now that Halloween is over I’m looking forward to baking for Christmas and getting into the festive spirit!

In the meantime, you should really try these Millionaire’s Shortbread Bars.  They’re so easy to make and perfect for sharing!

Millionaire's Shortbread Bars

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 3 hours, 40 minutes

Yield: 24 bars

A thick layer of buttery shortbread crust covered with gooey caramel and milk chocolate chips!


  • 1 & 1/2 cups all-purpose flour
  • 1/2 cup icing sugar
  • 3/4 cup cold butter, cubed
  • 1 can (300 mL) Eagle Brand Dulce de Leche Caramel flavored sauce
  • 1 cup milk chocolate chips


Line an 8X8 pan with parchment paper, leaving the sides hang over for easy removal, and set aside.
Preheat oven to 350 F.
In a medium size bowl, mix together flour and icing sugar.
Using a pastry blender or your fingers, blend in cold butter until mixture resembles coarse oatmeal.
Pour mixture into prepared pan and press down lightly.
Bake in preheated oven for 20-25 minutes or until golden brown.
In a small saucepan on medium heat, bring caramel flavored sauce to a boil, stirring constantly for about 5 minutes.
Pour sauce over baked shortbread crust and let cool for about 10 minutes before adding chocolate chips.
Once sauce is slightly cooled, sprinkle chocolate chips evenly over top and let cool completely.
Cover and refrigerate until you're reading to eat.
Cut into bars and enjoy!


* Total time includes 3-hour refrigeration time.

    Doesn’t like stuff in his ice cream?! That’s the best part! (Here’s a random tidbit I learned from a podcast recently: Jerry of Ben & Jerry’s fame lost his sense of smell, which also really impacts your ability to taste. So B&Js includes so many mix-ins in their ice cream because he could enjoy the different textures even if he couldn’t taste all the nuances. How’s that for a totally random blog comment?!) Aaaanyhow, these bars look incredible!
