When I posted my first cake a few months ago, I let you in on a little secret.  I don’t like cake.  I know you must be thinking I’m kinda crazy, but it just doesn’t do anything for me.   If I have to eat cake I prefer it to be dense and moist, like a brownie.

Now, one thing I do like is muffins!  Some people may think what’s the difference?  Well, I find muffins are almost always moist, dense, and full of flavor.  Unlike cupcakes which are just like cake.  No cupcakes for me!

I had a craving for muffins this past weekend and I wanted to have them for breakfast Saturday morning.  Can you guess what time I started to make these?  Oh, 10:30p.m!  Ya, what was I thinking?  Do I really need muffins for breakfast?  You betcha’!

I decided on an orange and chocolate flavor and I wanted to add yogurt into the batter so the muffins would stay moist.  I found this recipe which incorporated all the things I wanted and they were perfect!

Have you ever tried one of those ‘Terry’s Chocolate Oranges’?  If you like those than you’re going to love these muffins!  It has fresh orange zest, orange juice, and lots of chocolate pieces.  I also used vanilla yogurt instead of the plain yogurt it called for.   Perfect, dense, moist, muffins.  Just the way I like them!

Honey-Caramel Apple Bundt Cake

Honey & Caramel?  What kind of awesome combination is that?  Well, when you add it to apples and make it into a cake it gets even more awesome!  Fall is a great time to pick some fresh apples, straight from the tree, and head in somewhere warm and bake up something delicious.  These apples, unfortunately, were not picked by me but they still tasted fresh and juicy.  I chose crisp Gala Apples for this recipe but I’m sure any apple would be just as good.

The only thing about this post is this is the only picture I have of this cake.  All summer I had the luxury of using a Canon Rebel EOS Rebel which I borrowed off of a friend.  It was fantastic and I was really getting the knack of using it.  I did a lot of research on the web about aperture, IOS, shutter speed, etc.   So, when I went back to my own camera, a Canon Powershot (which has manual settings as well)  it just wasn’t the same.  The quality of pictures is nothing compared to the Rebel.  I think I’m going to start dropping hints to my husband that I NEED, not just want, but NEED a new camera!  I’m registered for a Photography course in October so all I need now is a new camera!  Oh, hubby……

Peach Jam

Luckily I had this post saved because of right now I’m pecking slowly at the keyboard.  We’ve just gotten back from the cottage where I fell down some stairs and broke my wrist.  So, unfortunately, my baking and posts will be put on the back-burner for about 6 weeks (unless my dear husband would like to help out!).  I will try to get some things posted during that time but I don’t know how much.  In the meantime, I hope you enjoy this delicious Peach Jam!

With the amount of peaches I’ve been buying this summer and the amount the kids have been eating, I was surprised to find enough left to make any jam at all.  I made this peach jam on the same day that I made my Cherry Jam because I already had everything out and ready to go.   I don’t recall ever trying Peach Jam before but figured the kids would like it or I could just give it away.   I know my dad would’ve taken it for sure.  As long as it has sugar in it, he’ll eat it! 

While I was making this jam I didn’t want to follow a recipe.  I figured that since I just made the Cherry Jam I could just tweak that a bit and hopefully come up with something good.  As it turns out, the jam turned out great, the kids love it and, sorry Dad, you’re only getting one jar.  But, I’ll make more if you ask me nicely!

S’mores Cake

Who doesn’t like S’mores?   Soft, warm, gooey marshmallows dripping in chocolate, sandwiched between crunchy graham crackers.  I’d find it hard to find someone who didn’t like them.  They’re also a treat that reminds most people of camping and summertime.  The other night, friends of ours came over for dinner and they brought a S’more kit with them for dessert.  What a great idea!  We fired up the BBQ after dinner and made the S’mores on tinfoil plates.  They turned out perfect!  That’s when I got the idea to one day make a S’mores cake.   Later in the week I decided to make it for my friend, Nicole, as she was celebrating her birthday.  I knew that she and her husband (along with another couple) were coming for dinner on the weekend so I set out preparing to make it for her then.

It was a simple cake to make and it filled the whole house with smells of delicious graham crackers.  I made the cakes the day before so they could set and firm up in the refrigerator before assembling it the next day.  The only thing I wish I would’ve done, which I planned to do, was toast the marshmallow filling before setting the top on.  My husband even had to blow torch out ready to go.  Unfortunately, when I was ready for that step, he had gone into town to pick up a few things and I wanted to get my pictures taken.  Oh well, I’ll just have to make it again!  Overall, we had a great evening with friends and the cake turned out great!  Happy Birthday Nicole!

 

To assemble the cake:

  • Step 1  – Place one of the cakes face-down on a cake platter so that you have a smooth surface for the chocolate frosting.
  • Step 2 -  Spread about 1/2 cup of the chocolate frosting on the cake and spread evenly.
  • Step 3 -  Spread the jar of Marshmallow Fluff evenly over top the chocolate sauce.  This is the step that I wanted to toast the Marshmallow Fluff with my husband’s blow torch!
  • Step 4 -  Gently set the second cake on top.  The Marshmallow Fluff with start to ooze out, but that’s okay.
  • Step 5 -  Spread the remaining chocolate frosting on top and let ooze over the sides.
  • Step 6 -  Decorate as you wish!  I used graham crackers crumbs, mini chocolate chips, and mini marshmallows.

Chocolate Banana Bars

 

 This recipe was whipped up one morning when I realized that I was supposed to be bringing something to my girlfriend’s wedding shower.  I told her a couple weeks before that I would be more than happy to bring something.  I also planned to make the dessert the night before so that I didn’t have to rush in the morning.  But, once again, I forgot and was scrambling to make something with the ingredients I had on hand since I had no time to run to the grocery store.  Lucky for me I always have bananas in the freezer and set out making these bars. 

The recipe was easy and quick and the bars were so moist.  They turned out like little pieces of individual chocolate banana loaves   The wedding shower was about 40 minutes away from my house and it was a hot, humid day.  I drove the whole way with the air-conditioner on full-blast so that the bars wouldn’t turn all gooey.  By the time I got there, I was freezing my butt off but the bars were perfect!  The wedding shower was beautifully decorated and we played all those fun shower games that gets everyone laughing.  There was tons of delicious food and my friend, Melissa, received lots of great gifts.  Congratulations, Melissa!  Can’t wait to see you on your special day!
