I know Christmas is only 2 days away but I wanted to share an amazing appetizer with you that would be perfect for New Year’s Eve!  Ringing in the New Year with these Black Bean & Corn Fritters with Creamy Cilantro Dipping Sauce would be the perfect way to celebrate.  Whether you’re having a quiet night in or celebrating at a large party with friends, this appetizer will be a big hit!  As always, I headed out to my favorite grocery store, the Real Canadian Superstore, to purchase all my ingredients.

Ever since we’ve had kids, my husband and I like to do something that involves the kids at least part of the night.  One year we had a family sleepover at a friend’s house.  We had a potluck dinner, the kids got to play and watch a movie and the adults got to socialize.  The kids went to bed not too late and the adults got to ring in the New Year together!

Last year we stayed home with our kids and we played boardgames around the fire, made fancy drinks, had snacks and let the two older kids stay up until midnight with us.  We followed the big countdown on TV and rang in the Year with a round of hugs and kisses!

This year we’re planning on getting together with a bunch of families and letting the kids have some fun together before they head off to bed and then the adults can enjoy some time to socialize and toast in the New Year.  All the families are bringing some appetizers to share throughout the evening and I’ll be bringing these Black Bean & Corn Fritters with Creamy Cilantro Dipping Sauce.  I had fun shopping for all the ingredients at the Real Canadian Superstore because it’s one-stop shopping.  I browsed the clothing section (for myself and the kids), the houseware section and I was even able to shop in the toy section for last minute gifts!  Every time I go into the Real Canadian Superstore I always find what I need (and they price-match!) so I don’t have to shop anywhere else!

Black Bean & Corn Fritters with Creamy Cilantro Dipping Sauce

Prep Time: 20 minutes

Cook Time: 8 minutes

Total Time: 28 minutes

Yield: 12-15 fritters

Delicious fritters packed with black beans and vegetables served with a creamy, slightly sweet, cilantro dipping sauce.


  • 2 cups canned black beans, drained and rinsed well
  • 1 cup canned peaches and cream corn, drained and rinsed well
  • 1 red pepper, chopped
  • 1/4 cup chives, chopped
  • 2 garlic cloves, crushed
  • 3 Tbsp. fresh cilantro, chopped
  • 1/2 tsp. freshly ground sea salt
  • 1/4 tsp. freshly ground pepper
  • 1/2 cup flour
  • 2 eggs, room temperature
  • Extra virgin olive oil for frying


Combine black bean, corn, red pepper, chives, garlic and cilantro, sea salt and pepper to a large bowl and stir well to combine all ingredients.
Add flour and stir to coat all ingredients.
Add eggs and stir well until all ingredients are coated and mixture sticks together. You can add more flour if needed to hold mixture together.
Once mixture is well combined, heat olive oil in a skillet, about 1-2" deep. Once oil is well heated, using a cookie scoop, drop balls of fritter mixture into the oil. They will flatten out on their own. Fry for about 3-4 minutes or until golden brown and turn over repeating on the other side.
Remove fritters from hot oil and place on a plate covered in paper towels to allow fritters to drain.
Dipping Sauce:
1 cup sour cream
1/2 tsp. Frank's Red Hot Buffalo Wings Sauce
2 garlic cloves, crushed
4 Tbsp. fresh cilantro, chopped
2 tsp. sugar
Freshly ground sea salt, to taste
Freshly ground pepper, to taste
Enjoy fritters with the dipping sauce!
